The best sounding drums I've heard were a set of DW zebra wood drums from their exotic wood collection. They were maple drums with an outer ply of exotic wood, it was a 5 piece set, no hardware just the drums for $3000.
Yamaha maple recording custom drums are excellent sounding drums and may be in your price range for the 3 piece you desire, so may the DW exotic wood series (I was looking at 5 piece).
The best sound advancements that have been made in drums were: 1: Maple drums have the best sound and always have.
2: vacuum sealing between the plies of wood to reduce air pockets and increase resonance.
3: Suspended toms reduce sound being carried through your hardware between drums. Suspending them from the rim eliminates the extra holes in the drum improving sound quality and eliminating rattle. When tom brackets have posts going through the shell of your drum, sound may carry through the hardware.
Yamaha developed the vacuum seal system, I'm not sure who first introduced suspended toms, maybe Pearl or DW.
I started out on Pearl drums (before exports were made), then I switched to Yamaha (powerV). Now I use Pearl export suspended tom fusion kit, I'm working up to DWs'
